Dr. Loosen Rieslings presented at the Bistro Apetit

Sophisticated Rieslings of Dr. Loosen winery, coming from the steep slopes of Mosel Valley in Germany were presented to the guests of Bistro Apetit on Wednesday, November 12. Ernst Loosen, director of the two hundred years old winery, explained the philosophy which leads them to the creation of incredibly intense Riesling that has become a world class since Ernst has taken over the family cellar and winery back in 1988. To achieve this, he has changed the viticulture practice, drastically reduced the size of the crops, stopped with the chemical fertilization and decided to use organic fertilizers and soil supplements only moderately. At harvest he insists on picking strictly selected, mature fruits that are processed with minimal use of technology, and this gentle way allows the wine to develop its full potential.

 

Riesling is one of the few varieties from which a wide range of wines can be produced, from extra dry to sweet. That is why they can be paired with all courses of the menu, which our guests could have tried for themselves, with a special menu that was created for that occasion by the chef Gregorio Mannucci. The evening stared with finger food and continued with the swordfish tartar on the eggplant cream with basil oil, along which Dr. Loosen Red Slate 2012 was served. A year younger wine, Dr. Loosen Blue Slate, was served with the homemade ravioli stuffed with brill on chevre cheese and pumpkin brunoise. This was followed by a foie gras on chestnut mousse and caramelized pear with thyme, which was paired by Dr. Loosen Erdener Treppchen spatlese 2012. A highlight of the evening was a salmon fillet with vegetable tempura, crème fraîche with mint and chives, accompanied by Dr. Loosen Wehlener Sonnenuhr 2012. The sweet ending was Dr. Loosen Erdener Pralat spatlese 2012 and Bavarese (Bavarian cream) with green apple, white chocolate and lime.

 

The rich inheritance contained in the bottles of Dr. Loosen confirms that tradition deserves to be respected, but also improved with modern techniques in order to obtain uncompromising quality which this winery insists at. All that is to achieve their main goal – to create delicious wines that are true to its roots.
